CRISPY ITALIAN CHICKEN
Ingredients
2 lb of chicken breast (1 costco pkg) diced
2 eggs whisked
½ cup breadcrumbs
2 tsp parmesan cheese
1 tsp Spicy Italian Seasoning (Salt Wolf)
Directions:
Preheat airfryer to 425°. Cut chicken into palm sized pieces and cover with cling wrap. Firmly pound chicken with mallet until ~1/2 inch thickness. Remove any moisture with paper towels. Whisk eggs in a shallow bowl. In a large plate combine breadcrumbs, cheese, and seasoning. Evenly coat chicken breast with eggs then coat with bread crumbs. Place on a foil covered baking sheet and air fry for 20 minutes.
