BLACK BEAN BURGERS


Ingredients

  •  3 tbsp olive oil

  •  ½ cup chopped onion

  •  1 jalapeno pepper, chopped and seeded

  •  2 cloves garlic, minced

  •  1 tsp dried oregano

  •  ½ cup red bell pepper

  •  ½ ear sweet corn, kernels removed (1/3 cup)

  •  1 can black beans, rinsed

  •  ½ cup whole wheat bread crumbs

  •  4 tsp chili powder

  •  1 tbsp minced fresh cilantro

  •  ½ tsp cumin

  •  ½ tsp salt

  •  ¼ cup flour

     

    Garnish

             Lettuce

             Tomato

             Avocado


Directions:

Heat 1 tbsp oil in skillet over medium heat.  Add the onion, jalapeno, garlic, and oregano.  Stir while cooking until onion is softened (~4 min).  Stir in bell pepper and corn, cook until bell pepper is tender (~4 min).  Mash beans in a large bowl, stir in veggie mixture, bread crumbs, chili powder, cilantro, cumin, and salt.  Then shape into 4 patties.  Put flour in a shallow plate and coat patties.  Heat 1 tbsp of oil in skillet over medium heat.  Add patties and cook until browned, add remaining tbsp oil and turn patties over and cook until browned.
