LEMON POPPY SEED PANCAKES WITH VANILLA BLUEBERRY CREAM


Ingredients

  • 1 cup Kodiak pancake mix

  •  ¾ cup milk (any kind)

  • 2 eggs

  • 1 tsp vanilla

  • ½ lemon juiced

  •  2 tsp poppy seeds

Vanilla cream

  • ½ cup 0% Greek yogurt

  • ½ scoop vanilla protein

 

Blueberry jam

  •  ½ cup frozen blueberries

  •  1 tsp honey


Directions:

Preheat skillet to medium heat.  Combine all pancake ingredients in a mixing bowl, set aside to thicken.  In a small bowl combine the vanilla cream, set aside.  Combine the honey and blueberries and microwave for 30 seconds, this will create a “jam”.   Pour batter onto griddle and cook each side until golden.   Serve warm and top with the vanilla cream and blueberry jam.
