CHIPOTLE SHRIMP TACOS WITH SPICY CILANTRO SLAW
Ingredients
1lb shrimp
3 tbsp chipotle peppers in adobo sauce, chopped
2 tbsp fresh lime juice
3 cloves garlic, minced
1 tsp salt
1 tbsp garlic powder
1 tbsp onion powder
2 tbsp honey
1 tbsp olive oil
SPICY CILANTRO SLAW
3 cups shredded green cabbage
½ cup fresh cilantro, chopped
¼ cup Greek yogurt
1 pickled jalapeno, diced
1.5 limes, juiced
¼ tsp salsa verde
1 tsp olive oil
1 tsp honey
1 garlic clove, minced
¼ tsp salt/pepper
CORN MANGO SALSA
2 ripe mangoes, chopped
1 ripe avocado, chopped
¾ cup corn
½ cup tomato, chopped
½ cup cilantro, chopped
½ cup red onion, chopped
1 pickled jalapeno, chopped
1 lime, juiced
Directions:
In a medium bowl mix the peppers, lime juice, garlic, honey, and spices together. Mix in the shrimp. Marinate in fridge for 1hr. In a large bowl add all of the slaw seasonings and mix together. Add the cabbage and toss until coated. In a small bowl add all of the salsa ingredients. Leave both the slaw and the salsa in fridge until ready to serve. Heat oil in a large pan and cook shrimp until pink on both sides. Add slaw and salsa to small tortilla and top with shrimp.
