CHICKEN TORTILLA SOUP
Ingredients
1 tbsp olive oil
2 costco pkg chicken breast
1 onion, chopped
1 orange bell pepper, chopped
1 red bell pepper, chopped
1 can (28oz) crushed tomatoes
1 can (10oz) tomatoes + green chili
1 carton (32oz) chicken bone broth
1 chipotle pepper
1 can black beans
2 limes
3 cloves garlic, minced
2 tsp chili powder
1 tsp oregano
2 tsp cumin
1 tsp smoked paprika
1 tsp salt and pepper
Toppings:
Fresh cilantro
Avocado
Cheddar cheese
Lime
Greek yogurt
Tortilla chips
Directions:
Heat oil on medium in a large skillet. Place chicken breast in skillet and sprinkle with salt and pepper. Cook until just browned on each side. Place chicken in crock pot. In the skillet, cook the onion and garlic until transparent. Transfer to the crock pot. Add all the remaining ingredients except for the lime juice to crock pot and cook on low for 4-6 hours or high for 2-3 hours. Once finished cooking stir in the fresh lime juice and enjoy with your favorite toppings.
